This year, we turned a "waste" product from our Pet Nat production into a pomace brandy. What we find particularly appealing about this is the idea of ​​using the grape residue from wine production as sustainably as possible. The skins of the pressed grapes are processed directly and fresh at the distillery.


The sustainable and economical use of resources and food is particularly important to us. Therefore, we constantly strive to process everything in the best possible way with product innovations such as our Pet Nat Alcohol-Free or the Pomquette. At the winery, this also means making the most of leftovers, as approximately 25 kilograms of pomace remain from every 100 liters of must.


The pressed skins are a byproduct of the fermentation process, and the pomace is too valuable to simply discard. Part of the pomace is returned to the vineyard, its valuable components serving as nutrient-rich fertilizer in the form of organic matter. We've now used the remaining portion of the fermented pomace as the base for a further distillation to produce a spirit. The skins are packed with high-quality aromas that truly unfold in the distillate. Double the enjoyment and a second life for our grape skins.


Currently, the brandies are included free of charge with every Pet Nat order.
