Arno is not only a trained chef, but also a certified sommelier. His growing passion for organic and natural wines led him to the desire to produce his own wine in 2019. Since northern Germany isn't exactly known for its vineyards, Arno drew inspiration from the abundant fruit in the Altes Land region and set out to find the best regional ingredients.
This is how Klaar Fruchtfermente came about: winemaking craftsmanship and the same precision and dedication that one shows to grape varieties, applied to local apple, pear and quince varieties.
In the heart of the Schaalsee Biosphere Reserve, Arno has partnered with the Kneese fruit manufactory to form a cooperative farm community. Using apples and other fruit varieties from certified organic orchards, Arno produces cider-style fruit wines – unpasteurized, without filtration, fining, or artificial additives, many of which are made using the traditional bottle fermentation process, known as Pét-Nat. The old varieties, grown in these orchards, not only possess unique aromatic qualities that shine through in the ciders and fruit wines, but their use also contributes to variety preservation, supports organic farmers, and maintains vital habitats for animals and insects.
