If you want or need to abstain from alcohol, this unfortunately usually means missing out on exciting drink pairings. Sweet sodas and spritzers aren't usually the most appealing food companions and often lack complexity on their own. Many wine lovers are experimenting with alcohol-free wine, which requires a complex dealcoholization process that results in a significant loss of flavor. The wine is dealcoholized using highly technical methods, either vacuum or high temperatures, which leads to the loss of important aromas, freshness, and mouthfeel. Furthermore, when alcohol is absent, it's often necessary to rely on other flavor carriers, usually involving the addition of a lot of sugar and artificial flavorings.

These elaborately dealcoholized wines have little in common with natural wine or low intervention wine for us.

It was important to us to create a delicious non-alcoholic alternative to wine without compromise, but also without aggressive dealcoholization methods and additives. For our first bottling, we teamed up with our friends at Bouche, whose kombuchas we have already offered as a non-alcoholic alternative at our events.

This collaboration has given rise to a new category: a complex, fermented, grape-based infusion. With Riesling grapes, acacia blossoms, blackberry leaves, and sour cherries, our non-alcoholic beverage offers a sparkling, refreshing mix reminiscent of a natural wine.

Few ingredients, full flavor, and all achieved through a gentle process. Unlike many alcohol-free products that undergo complex mechanical dealcoholization, we rely on natural fermentation. This not only preserves the diverse aromas but also ensures a transparent ingredient list – without compromising on taste.

Like us, Bouche stands for quality and natural, traditional methods. At their kombucha brewery, the team relies on carefully selected ingredients and uncompromising quality, using traditional methods of brewing beer and making wine, and working with a proprietary liquid starter culture composed of yeasts and bacteria. Bouche products are unpasteurized and barely filtered to preserve the live microorganisms.
