It's hardly a matter of varieties anymore; these are brands.
New varieties with a closed marketing concept and specifications from cultivation to packaging. Protected branded apples for which everyone who grows them must pay licensing fees.
The existing seeds are modified to produce high yields, but no new, usable seeds are generated. This forces farmers into a dependency of having to buy new seeds every year.
New varieties account for over 90% of the market share in Europe. Ten corporations control approximately 74% of the global market, including related pesticides and fertilizers.

In the process of breeding out the appealing supermarket varieties, not only are acids and tannins removed, but also important vital substances such as polyphenols, which have, for example, antioxidant and anti-inflammatory effects and help to reduce the allergenicity in the varieties.

Biodiversity must be preserved and protected; food and seeds must not be licensed by large corporations.

Our heritage varieties have names like SeestermΓΌher Lemon Apple or Finkenwerder Autumn Prince and come from certified organic orchards where standard trees of mixed varieties grow. This is the most beautiful cultivation method in terms of biodiversity and sustainability, not only because it provides habitat for all kinds of animals and insects, but also because it is more resistant to disease and helps preserve the varieties.
